This description from ‘Teri’s Gluten-Free Cooking Blog’ about Buckwheat is very clear indeed; hence why we chose it to illustrate what this fine, yet unknown product truly is:
”Buckwheat- what a misnomer! Buckwheat doesn’t contain wheat or gluten and it really isn’t even a cereal grain- it’s the seed of a plant that belongs to the rhubarb family.
Flour ground from buckwheat seed is a delicious, nutritious alternative gluten-free ingredient. It has a slightly nutty, earthy flavor and is high in protein, manganese, magnesium and fiber.
Buckwheat is native to Russia where buckwheat is used to make traditional blinis, yeasted pancakes served with crème fraîche and caviar. In Asia buckwheat flour is used to make Asian soba noodles. According to Rebecca Franklin, About.com Guide to French Food, tradition buckwheat crêpes are called “Breton Crêpes” and you will find them called “Galettes de Sarrasin” in French cookbooks as well.”
